What A Surprise!

Good morning everyone, I hope your Easter was blessed and you enjoyed time with friends, family, or both!

This morning I decided to try a blueberry recipe I found on Pinterest and what a surprise, the Lemon-berry Muffins were quite delightful, despite being made with coconut flour.

Typically in the past, I have not had the best results with coconut flour and prefer to bake with almond flour or some mixture of the two. These turned out moist, delicate, delicious! You should give them a go yourself!

Full disclosure; I use different sweeteners than she does, yet did everything else the same-somehow I came out short a few muffins, but 9 1/2 is good for me! Maybe I will share some with my dad. 🙂

I also used fresh, not frozen blueberries (alone) and it turned out fine, very juicy and semi-sweet. The sweetener sprinkled on top makes them look pretty and adds just enough sweetness to the muffins, plus I love the lemon-blueberry combo!

I also always use silicone muffin liners so cleanup is easy, but I need to buy another set, because I only have 7 and this recipe makes 12 muffins (in theory). Do try these for yourself and let me know how you liked them!

  1. Thanks for this nice looking recipe – although I was curious as to which sweetener you used – oh and I went to the linked site and was just disappointed that the recipe did not use any fresh lemon
    – she had a basket of lemons and one in her photo – but the recipe used lemon extract which is a bit processed snd from a plastic container from a factory – probably ok in a pinch – but all those fresh lemons and turned to plastic stored processed extract?

  2. As scrolling through another’s blog, I saw the word “Keto, and wanted to investigate. I am—or trying to do—the Keto way of eating. My daughter gave me the Southern Keto cookbook by Natasha Newton (Victory Belt Publishing). It is fantastic. I have already tried several recipes and modify some as well. My problem is too much of a good thing 🙂. Everything is so good, it’s difficult to only have one serving.

    I started the end of February and had I not binged a few times and snacked in between meals, I would have met my first goal of losing five pounds. Well, I will try again in hopes that I can remain totally faithful if only for a week.

    1. Thank you for visiting! Yes I was doing well for a while but then I fell off the wagon during a stressful time and can’t seem to behave 100% of the time! I eat well but can’t stop the wine, or the occasional margarita 😁

Patty – my take on keto as a lifestyle is not about weight loss – when you really immerse you eat until you are full and you become fat adapted – and then you can go longer without eating because you are using a different fuel Source (not sugars and carbs) – and so there is a long term way of enjoying keto eating
