Would you guys like to know what is my new favorite Keto side dish? Well here’s the answer; Zucchini Gratin!

Tonight I made it for the second time and it was better than the first. I guess that’s what happens with practice 😊 The recipe is easy to follow, takes just a few fresh ingredients, and is super delicious!

The recipe comes from I Breathe I’m Hungry and of course I found it on Pinterest. It’s low carb, Keto, paleo, and gluten free. Since taters aren’t Keto and most people eat Au Gratin Potatoes, this is the next best thing.

I used cheddar and mozzarella cheese, although the recipe called for pepper jack. It was still delicious! This time I made it in a shallower dish and it turned out less soupy than the first time.

We paired it with cheesy brats, green beans, and a small piece of pork steak. Then, for a special low carb treat, I made my very first peanut butter pie! Omg, it was so rich and fabulous, a tiny slice was perfect!

No salad tonight! Got my veggies in though!



Small slivers are all you need

I know it looks like a lot of food, but I don’t eat much during the day, so I look forward to a good dinner. For instance, this morning I had Keto pancakes which are just an egg mixed with an oz. of cream cheese.

Lunch was a snack really, home made almond clusters- I had one. I ate breakfast late and had drank my bulletproof coffee, so I stayed full til dinner. Btw, the pie recipe came from Keto Connect and the clusters from Keto Whoa.

Normally I track my macros and worry about how many carbs I ate. Yet now that I’m taking my supplements from Pruvit, I don’t have to do that. So I’m trying to get back to just sticking to my diet.

Actually, I have been off my supplements until my auto-ship gets here. I cannot wait, I miss the energy, focus, and lack of cravings I enjoyed while I was drinking my ketones.

  1. I am so glad you landed on my blog and liked something I wrote because I just started the Keto diet and was needing to find some variety recipes. I began with boring and basic with the exception of the seed bread from Dr. Colbert’s book, which is yummy, but I’m tiring of it. What I don’t understand and maybe you can help, it says something about consuming x number of grams of protein per weight. Which would be for me, less than three ounces of protein a day! Am I reading that right? I’ve been doing way more than that and I fretted about it. I lost a few pounds at first and then plateaued so is that why? How do you differentiate protein from fat? I have so many questions.

    1. Ok, well I used to visit your site a long time ago, I don’t know what happened in the interim, but check out more of my posts and also my Pinterest page. It has tons of tasty recipes and tips. There are many reasons why you might plateau, without knowing your exact diet and exercise routines, it’s hard to say. Basically, you want under 25g of carbs, moderate protein and high good fats-avocado, coconut oil, MCT, real butter, etc. Try to be pretty strict for the first few weeks, and then once you become Keto adapted, you aren’t hungry or craving things. Drink lots of water and make sure you get your electrolytes!!

      1. Thanks! I did get to where I wasn’t hungry or craving, which was great. The craving is the worst, but with company and my dog lost, I’ve been distracted.

    1. I’ve lost another 6 pounds practicing intermittent fasting lately. The drinks I’m drinking from Pruvit help ne go without eating for long periods, but I would not do that on a continual basis. Just until I get down to my ideal weight. Right now with my back hurting though, I haven’t been drinking the drinks because I don’t want my back to spasm any more than it is.

      I thought I’d already posted something regarding this, but I can’t see it here so I hope I’m not repeating myself. Anyway, where can I get my questions answered regarding Keto? I have lots of questions regarding how much protein to consume per day and what qualifies as protein and/or fat or both? I started it for a week, lost 4 pounds then went over to hcg for three weeks. I preferred the Keto, but believe I was not doing it right yet, I was never hungry. I also got discouraged because in Dr. Colbert’s book it says that we should consume, 15% protein which recommended is 1grams protein per kilogram of weight, which in my case 69g or less than 3 ounces of protein a day! That’s not very much.

      1. If you aren’t hungry, don’t eat. Don’t worry about it. If you are following the diet and tracking your macros, intermittent fasting will help the fat melt off! That’s what I do and I have done well to maintain my weight loss. That helps break through the plateau.       1. No. I don’t like it. Makes Keto or paleo impossible for me. I never liked meat, even as a kid. I will occasionally eat an egg or tuna but, I do have an egg white allergy so I have to be careful and tuna grosses me out after a couple days. Can I live on cheese? Call the diet Chesso? Of course dark chocolate has to be allowed. ;-D

        1. Dark chocolate is perfectly fine! Cheese, nuts, buy the egg substitute and try it! I make my dad egg cups with egg substitute, cheese, and veggies.
