How to make these Keto chocolate chip muffins is very easy, I have not done anything this productive all week. My sciatica is pinched and I have a herniated disc in my low back.

So, after lots of doctor visits and trying to navigate the workman’s comp rules, I came across an article about using a tennis ball or a foam roller to relieve the pain. So, I tried it.

I did feel better long enough to get the muffins made, yet my leg started to ache again after standing for 30 minutes. I will continue to do it in short bursts and try not to sit so much.

Before baking

These chocolate chip muffins were so yummy and just the thing to tame that sweet tooth of mine. I got the recipe from Fat For Weight Loss, it was so easy to whip up and I had all the necessary ingredients on hand.

I should have poked the chocolate “chips” further down into the batter, tips you learn after baking the first time. They weren’t pretty, but oh were they delicious! 😋

After being in bed almost a whole week, it was nice to do something worthwhile and get a sweet treat in the process! I’d run out of fat bombs and needed a replacement quick like.

  1. Sciatica problems & a herniated disc… that’s just greedy to have all that! Crikey, I can just imagine the pain and aching you must be dealing with. I’m glad the roller/massage helped a little. Does ice or heat do anything? I think you did a great job with the muffins, and they look yummy! I could just lick that melted chocolate off them, and yet there’s some part of my brain that really wants the uncooked batter version too! I really do hope you’re able to get reasonably comfortable so you can catch up on more rest this weekend, even though you’re probably going stir crazy being confined to bed for such long periods.     1. Thank you so much! Yes, ice and heat help some, but discovering these exercises may be the ticket to healing quicker! I know I want to get off the muscle relaxers and pain pills soon, but I have to FINISH the steroids completely. Thanks too for your praise of the muffins, one note, they have to be refrigerated and so they are better heated in the microwave for about 15 seconds!
