So, for the rest of this week, I thought I’d post a few of my go-to recipes from my Pinterest page, Everything Paleo at Kim Smyth.
I love chocolate chip cookies, so when I get a craving, I turn to this version from Texanerin Baking which are gluten free,grain free, dairy free and vegan. Don’t let all that fool you though, these cookies are seriously delicious!
Here is the recipe and thank you to Erin for providing it!
1 Cup blanched almond flour
1/4 Cup coconut flour
1 tsp baking soda
6 Tbsp coconut oil or unsalted butter, room temp (firm though not melted)
3/4 Cup coconut sugar
6 Tbsp natural almond butter (no sugar added)
1 1/2 Tsp vanilla extract
1 Lg egg
1 1/4 Cups paleo friendly chocolate chips (I prefer dark) EnjoyLife makes the best!
In a medium mixing bowl, stir together the almond flour, coconut flour, baking soda and salt. Set aside.
In a large mixing bowl, beat together the fat and sugar at medium speed until well combined, about one minute.
Beat in the almond butter and vanilla on medium speed and mix until combined. Beat in the egg on low until well incorporated. Stir in the flour mixture until well combined. Then stir in one cup of the chocolate chips. If you used coconut sugar, place bowl in the fridge for about one hour til firm.
Preheat the oven to 350 degrees F and line a baking sheet with parchment paper or baking mat (my preference)
Roll dough into balls and place 3″ apart the mash slightly with the palm of your hand (or the back of a spoon)
Bake for 11-14 min. or until the surface of the center no longer appears wet.
Let cool on the baking sheet. Store in airtight container for up to 3 days, or in the fridge for a week.

Good morning everyone! How are you all doing on this beautiful, albeit, hot morning? My first venture outside proved to be warm and muggy already at 7am! Anyway, it’s gonna be a great day and I just wanted to share my joy with you-it’s about a new product I’ve been eating and it is nutritious and delicious! This is a cereal, something I don’t eat much of, since I follow the Paleo lifestyle. It’s by Van’s brand and it’s called Blissfully Berry. All of their cereals are made from whole grains including gluten free oats, brown rice, millet, quinoa and amaranth. No wheat! As far as I’m concerned, that is safe for those like me that eat a whole food diet. The company is very concerned about clean eating and most, if not all of their products are non-GMO and certified gluten free.
As you can see, I enjoy them with So Delicious cashew milk, and of course, my bulletproof coffee. Just in case the Paleo police come after me, I’ve reached out to the company to assure me that their products are safe for those on diets like mine, regardless, I will continue to enjoy them, since I follow the 80% rule most of the time. That is, I eat Paleo 80% of the time. I’m healthy and still at my target weight, so I’m not that concerned.

As we sit on the patio, awaiting whatever will become of our Friday night, I’m happily checking out my newly painted fish and “coral” that I finished and hung this afternoon.
I don’t know what it is about looking at a new creation or finished craft that produces a kind of high for me, let’s just say, even though these were gifted items, I’m proud to have given them a new look and its an exciting feeling, like I’m finally getting the decor more like what I want it to be. As we make more improvements, I’ll post more pics.
My goal is to have a comfy place for us and our friends and family to hang out, visit, and feel close to the beach-even if we’re not 😉. Much more work is to be done but just having the new furniture, a few plants and pics and this newly finished project makes me feel that much closer!
