Oh, Good Grief!

I am so sorry folks, I just realized I never published Friday’s blog, so instead of editing it for today, I panicked and pushed the Publish button, so you will see a blog for today and for Friday. Ugh!! I was probably going to add a picture and got busy and never got back to it, and that’s why it never got published! Good grief!!

I know I am whining, but it is soooo cold today, even in the house! I need to adjust the heat again because it’s 24 outside and feels about 50 in the house. I’m literally sitting at my “desk” wrapped up in a blanket while trying to type. Then again, maybe it’s time to eat and that would warm me up.

Speaking of eating…I had a bit of a cheat night last night because we were invited to dinner at my brother-in-law’s house and he was serving lasagna, salad, bread and of course, wine. So yeah, I did. I had two 1/2 glasses of 2 different types of Cabernet-very good Cabernet! Secondly, I had about a serving the size of a deck of cards of lasagna….heavenly but I have no idea how many carbs. Then Connie had made some delicious bread which is normally a complete no-no for me, but I just had to taste a bite because everyone was raving so. It was melt-in-your-mouth delicious! Her salad was what I ate the most of, it’s so good with spring greens, spinach, berries, and nuts and just the slightest bit of mint thrown in, topped with a raspberry vinaigrette. I know, probably more sugar than I should have eaten but…

At least when we got home and my husband went for a bowl of Blue Bell, I sat and drank my water and after another hour or so, while waiting what seemed like FOREVER for This Is Us to come on, I had one of my yummy fat bombs and that totally satisfied my desire for something sweet. I almost had a meltdown during the show when my TV locked up, I had to listen to one whole scene while the picture was locked where it stopped on the previous scene. Everything got wonky for a few minutes, I tried turning the channel, turning the TV off and on…then it threatened to not come back on! I was really freaking out by this point, thinking I would miss the show, I went and turned the TV on in the game room…just as the signal came back on in the living room! Phew, that was a close one! It was a great episode and remains one of my favorite shows I watch, thanks to Stephanie Kilgore for getting me started!

I also started a crochet project last night but I’m not happy with it, I may end up ripping it out and starting over, or I may just create something totally different than what I started with. I wanted to make some ear warmers, they may become a scarf, lol.  I did however make the headband to go on my Red Hat for the luncheon Saturday and here’s a picture of all of us eating at Souper Salad!

The fact that I am cold and hungry is blocking my creativity and I cannot remember what else I was going to talk about so, I’m off to figure out something for breakfast. Have a lovely day everyone and keep thinking warm thoughts!

Just A Note

Good morning everyone, man it’s cold here today but I can’t complain, at least we aren’t buried in five feet of snow!

This morning I weighed in and checked my ketones which were at 40%. Testimony to the fact that even one alcoholic beverage can make a difference- although it was “skinny” and sugar-free, your body naturally wants to burn off the alcohol first instead of your fat, which takes a toll on your state of ketosis. On top of that, I seem to have gained two pounds back and that is weird because I have not eaten as much this week as last!

I had been doing so well, documenting every meal and then I got lazy, I need to find a specific place to write it down daily because it really keeps me on track and helps me maintain the proper macros.

“Date” night was last night and I once again picked a loser. 🙁  Chilis has been a good choice for us in the past with its variety of yummy things to eat, healthy choices and the fact that they offer skinny margaritas is a plus right now. Last night was not so swell. The margarita was so sour I could not drink it without adding some liquid Stevia and even then it was pretty bad. The food was bland and just ok, my asparagus tasted like grass for the most part but the Ancho salmon and broccoli was ok. It is hard to go to Mexican food places right now while I can’t have chips but we always enjoy our meal at least when we do. So…Dave gets to pick from now on. 😉

I have a luncheon with my Red Hat Society ladies tomorrow at Souper Salad, I’m looking forward to that and I may even crochet myself a purple hat band and go purchase a Red Hat pin to dress up my hat for the occasion. It will be my first time to wear it at an event! I had previously made a less-than-beautiful beaded hat band, it made it heavy and it kept falling off so…btw, we are called the Glitzee Girlz if I haven’t already told you that. I’m so proud to say, my cousin,  Mary Fairley got another story published in Mississippi Magazine and I cannot wait to read it. I mentioned the fact to her that it was nice that she and some of my other friends are finding a measure of success later in life. Just another reason to never give up on your dreams! This was her best paying story to date and it gives me hope that I may someday reach that level of success. (This is a wonderful magazine btw, full of great stories, yummy recipes, and just a feel-good vibe, worth the price of a subscription.)

On that note, I still have not heard back from the magazine I submitted my article to yesterday, but I will keep you posted if I do and it is accepted. For now, I gotta go…lots to do and so little time!! Happy Friday everyone! 🙂

 

 

 

 

 

 

 

How Fat Bombs Help To Keep You Thin

I know, I know…I didn’t wait for your responses, but to be fair, no one had one about my name change except for my son’s girlfriend who didn’t see my blog before I did the name change. She liked it and so do I…for now, I will leave it and see what happens.

So today I thought I would post a picture and a recipe of one of the easy fat bombs I’ve been making and then tell you about one of those “happy accidents” that happen when you tweak a recipe and it comes out waaay better than you imagined.

These I got off of Pinterest from Living Well Mom and even they were tweaked a little since I used cashew butter instead of almond butter. I halved her recipe and made half like this with my cute silicone heart molds and the remainder of the “batter” I added heavy cream and pecans to and OMG! They came out tasting like creamy, delicious, pudding pops and I had to stop myself from overeating them! Mine also have a little bit of Pyure brand stevia in them, a totally all-natural sweetener.

Not beautiful but oh-so-delicious, melt-in-your-mouth goodness!

The plus to eating fat bombs on a Keto or Paleo diet plan is that they actually help you BURN fat, curb sugar cravings (wha?), and boost your metabolism so why not enjoy one or two a day? The science behind it has to do with coconut oil having MCFA’s (medium chain fatty acids) which are very effective at obliterating fat. Also, they support your immune system due to the lauric acid in the coconut oil (wonderous stuff, no wonder I eat it by the tub!) And since you need your macros to be at least 50% of your daily intake to be from good fats, these little gems help you fill the bill!

So for me, eating such a restrictive diet makes these a treat I look forward to, heck, I may have one after breakfast and one after supper, as long as I get that fat in somewhere during the day. It is so hard reversing my thinking to eating more fat than anything else, after a couple of years eating more plant-based, higher protein diet. Yet, the scale shows it is working! Five pounds lost my first week!

Thanks to recipes like hers, I am sure I can continue to eat this way for a few more weeks. I just wish the weather would warm up so I could start walking. I’m doing all the exercises the doctor and PT gave me, yet I don’t feel like they are enough. I have been making trips to the store, just to get some extra movement in my day on top of the exercises and housework I do on a regular basis. 😉

Do try these easy fat bombs, play around with the recipe and let me know what you think! Use any kind of nut butter you can tolerate, add nuts (or don’t), slip in an essential oil (like peppermint) or an extract, in other words, go crazy! Why I'm Thinking of Changing My (Blog) Name

Morning everyone from a very chilly patio today! I was a late riser having had my sleep be broken a few times last night and I’m very slow to get moving this morning. (darn dogs, darn husband) 😉  That being said, it’s time to move on.

I don’t know if I told you guys or not, but I finally started journaling last week. I don’t mean on the computer-like this blog, I mean literally free writing for 10-15 minutes every morning to put my thoughts (however random) down on paper, clear my head, and just make an already good habit of writing something every day even better! It may read like gibberish to anyone else, but that is what all the “experts” on the subject of writing say to do, and I’m here to tell you, it works!

I think I have a bit of good news to report, after a week on the new Keto diet, my test strips showed Friday that I was indeed in ketosis. Now, I’ve heard that this may or may not be the best indication, but if you need another, my breath seems to be changing as well. (one of the more unpleasant side effects) I got on the scale and I weighed 110lbs! Ok, I may have weighed wrong last Monday, or my eyes did not read the scale correctly, there is no darn way I lost 5 lbs in one week. That’s what it said though.

Ok, the whole name-change thing. I’ve been toying around with the idea of renaming the blog something more solid so everyone knows what I’m about in case I ever want to get serious about this blogging thing. 😉 I was thinking something like Kimmy’s Keto Patio…unless yall have a better idea. Any suggestions are welcome, I will continue discussing anything relevant to alternative health ie; Paleo lifestyle, Keto dieting, recipes for both, essential oils, CBD and its benefits, in addition to PKD, book reviews, music, writing, or anything else that you all want to know about/hear.

We had a nice weekend and got to meet and spend time with my middle son, Joshua’s new girlfriend Chastity. I also got my baby fix while waiting at their apartment for her mother to come pick up her boys-she has a 9-month-old and a nine-year-old! I was trying to help them get organized and packed and he was crying, so I went into the bedroom and played with him, held him, and generally tried to keep him entertained while they did their thing. He is a sweet baby, but what a chunk! I wish I would have taken his picture (I wasn’t thinking) he and his brother are both handsome. His brother is Hayden and he is Westin (Westyn?) not sure how she spells it. I did get a picture of the two of them though.

We also spent time with my Dad and Sean, but never got her (Chastity) over to Claudette’s to be introduced. That’s alright, there will be another opportunity I’m sure. Chris came over for a short visit on Saturday and then we took them home yesterday. Over the weekend Dave and I helped him work up a resume. Will you all join me in praying his application for a new job is accepted and he gets work?! I need all the prayers I can get on this one people. He needs a job badly in this particular situation. Thanks in advance! 🙂

Well, I could talk to you guys all day but I have lots to do, I haven’t done my exercises yet, I got a small gig I need to get going on and the house isn’t going to clean itself. Cooking to do, food prep, oh, and I’m going to talk to TCJC about a couple of writing classes. And if that’s not enough, I need to go to Kohls and JoAnn’s today (maybe that will do for my walking) so I better get busy. (I need new yarn and I have a coupon burning a hole in my pocket 🙂 )

One more thing…I got a temporary 2-day job delivering flowers for Brice’s florists for Valentine’s! That will bring in some much-needed, good money (although it will be a long 2 days) and the days I’ll be working are the 13th and 14th of Feb.

The doctor told me on Friday I was good to go, could do anything I felt up to and he would see me in 3 months! Before that visit, I will have x-rays taken to see how well everything is healing up in there, he also wants me to back off my Gabapentin and see if my neck pain is really gone yet. Unfortunately, the numbness in my fingers and my right heel is still there and he said that may take up to a year to resolve! Ugh! Plus, I still get tired really easy when I do a lot, I need to build up my tolerance before that week of the job!

Am I Crazy for Keto?

…or cuckoo for Coco Puffs? Lol! Just kidding!

Hi everyone, how’s it going on this chilly Tuesday morning?

I know, you guys are probably wondering what is going on that I would switch from my usual way of eating (Paleo) to something new (Keto), but that is what it is going to take to drop the 10-15 pounds I have gained over the last 6 months! Basically, I’m having to re-set by detoxing from all the sugar I’ve been (mostly drinking) consuming and the cheating that has gotten so out of hand.

I have been scouring the internet for instruction, recipes, and support groups and I’m happy to say, I found everything I needed to get going. I feel inspired! I know I can do it because I did it before when I first started with the paleo diet 2  and a half years ago. So I have the basics down, I know how to eat for good health, I just have to put my mind to it.

Getting away from sugar is like trying to kick heroin…not that I would know-I’m just saying, it’s HARD! Once you let the Devil in (I’ve written about this so many times), it is extremely hard to kick those cravings. My advice (for myself as well as others) is to keep your goals in the forefront of your mind.

  • Have something to look forward to, like new clothes or in my case another cruise!
  • Think of how healthy you will be when you drop the weight
  • Look forward to the possibility of reducing the need for medication (some people get off their blood pressure medication once they lose weight)

How Keto Differs From Paleo

The Paleo lifestyle is all about getting the gut healthy and eating quality foods that support digestive health. In turn, this helps some people lose weight, balances blood sugar, and is therapeutic for autoimmune conditions.

The Keto diet, however, is more about rapid weight loss but it also improves health conditions such as type 2 diabetes and Alzheimer’s disease.

They are similar in that the emphasis is on healthy fats, no grains, no legumes and no refined sugars.

The differences are that the Paleo diet is not exactly low carb, high-fat. Since starchy vegetables and natural sweeteners like honey, 100 % pure maple syrup, and coconut nectar are allowed, your body will continue burning glucose as energy unless you really restrict your carbs to a low enough percentage to enter ketosis. (around 5%)

On the Keto diet, you are not allowed many fruits at all (mostly berries) and no veggies like squash or sweet potatoes! (I’m gonna die) The focus is on lots of healthy fats like avocado, coconut oil, olive oil, and butter (I’ll stick to my Kerrygold). Full-fat dairy is also allowed on the Keto plan, (hello cream cheese :)), and less protein is encouraged. So where my old breakfast might have included an egg cup and half an orange with my bulletproof coffee, today I omitted the orange and added half an avocado. So really, I can be Paleo and enter ketosis (by eating a Keto diet) at the same time!

This is all one needs to do:

  1. Don’t eat any dairy except grass-fed butter and/or ghee (and cream cheese for me :))
  2. Track your macros to stay within the range that will allow your body to enter ketosis
  3. Choose grass-fed or pasture raised animal products whenever possible (I never did that anyway, too expensive for me and my budget)
  4. Pick no-calorie all-natural sweeteners like Stevia

{I can even have the occasional adult beverage as long as I stick to Vodka (0 carbs) and zero calorie mixers. You have to be careful with that and not overdo it once your body adjusts to being in ketosis, some people report getting drunk faster and hangovers being worse. So take it slow and easy if you choose to drink.}

Personally, I will probably do Keto whole hog for at least three weeks and see how it affects my waistline before I go back to my (stricter version) Paleo lifestyle. My challenge will be adjusting my macros (around 75% fat, 20% protein, and 5% carbs) and eliminating the sugar. I joined a Keto challenge site (late so I can’t win a prize but that’s ok) so follow my progress on Instagram as I post pictures. I also started pinning a bunch of Keto recipes on my Pinterest board (I stupidly removed all my Paleo pins, ugh!) so you can find some there if you are interested.

I’m going to go ahead and wish you and myself luck and tell you my weight-loss goal so you can help keep me accountable. I want to get back down to 105-100 lbs and maintain a size 2. That is where I feel the most comfortable since I am only 4′ 9″ any extra weight really shows on me. As of this morning,  I weighed in at 115lbs.

One other point, I (you) will have to purchase some Ketosticks so I can tell when my body gets in (and stays) in ketosis. I looked and they cost around $10.  More study will need to be done before I understand how often to check my urine, how to plan the perfect meals, etc. but I will find out the answers so I can  keep yall informed. 🙂
