Food Poisoning Blows! 🤮

Ugh!! I guess I contracted food poisoning somewhere over the last few days, and food poisoning ( otherwise known as foodborne illness) really blows y’all!! 🤮

I spent all night in one or the other of our two bathrooms…vomiting, and then suffering the watery diarrhea, over and over. Now I’m writing from my bed, too weak to want to do much at all.

There is no telling where I picked it up, Tuesday I ate at a salad bar, Wednesday I ate at a Chinese buffet, and last night I made my first attempt at Keto Green Curry.

See the Asian eggplant in the Green Curry I made last night?

I was a bit worried that the frozen chicken had been on the counter thawing for 7 hours, yet it still felt cool when I stuck it back in the fridge til Dave got home to cut it up for me.

Then it cooked hard for 15 minutes and simmered about 20 more as I made the    “Miracle Rice”. All of t tasted good, I just didn’t feel that hungry, as the night went on, my stomach hurt worse and worse til all heck broke loose around 10:30 pm.

Miracle rice boiling in the pot

Besides, if it was the chicken, wouldn’t Dave be sick too?

Now I’m sipping water and nibbling on crackers, laying in bed feeling gross and all I can think about is what needs to be cleaned. With Clorox! Ugh!

signs and symptoms of food poisoning

  • nausea
  • vomiting
  • watery or bloody diarrhea
  • abdominal pain and cramps
  • fever

I had every single one of those, and a throbbing head-that part is still hanging on.

According to the mayo clinic, “signs and symptoms may start with an hours after eating the contaminated food or they may begin days or even weeks later sickness caused by food poisoning generally last for a few hours to several days.”

I don’t know what to do first,  eat something like soup, clean up all the messes I made, or take a shower, but all I FEEL like doing is laying here.

And to think, I was trying to remain Keto compliant. Eating salad one day for lunch, then meats off the buffet the next…only to catch some kind of virus or food poisoning. Not the way I’d go about losing a pound or two! 🤮

Stay vigilant y’all! Wash your hands and be careful of your food choices when out…better yet, cook your own as much as possible. I normally cook at home but dad and I go out once a week at least for lunch.

Have any of you every had food poisoning?

When to see a doctor

  •  Frequent episodes of vomiting and inability to keep liquids down
  •  Bloody vomit or stools
  •  Diarrhea for more than three days
  •  Extreme pain or severe abdominal cramping
  •  An oral temperature higher than 100.4 F
  •  Signs or symptoms of dehydration excessive thirst, dry mouth, little to no urination, severe weakness, dizziness, or lightheadedness
  •  Neurological symptoms such as blurry vision muscle weakness and tingling in the arms

Luckily I’m over the worst of it!

I had it the worst one time in Korea. what was weird about that time was, I used to eat food from the village in Oijonbu all the time, yet I got this horrible case of food poisoning ON BASE!

I had eaten lasagna from what I remember at the officers club.

Since I started this post I managed to eat some soup and a few more crackers clean up the mess I made and now I’m about ready to go lay back down. I’m sorry that I’m out of it today, I tried to catch up on my email, but my eyes even hurt.

I hope everyone is having a way better Thursday and feeling great! I’ll be back as soon as I recover. 😊

How to Get Your Soak On-Benefits of Epsom Salt Baths

My back hurt so bad when I got up this morning, instead of reaching for a pain reliever, I made myself a nice, hot bath with Epsom salts and Helichrysum essential oil blend. Let’s talk about the benefits of and how to use Epsom salts.

Epsom salts have many uses

How Epsom Salts Work

Rumor has it that when you soak in a tub with some Epsom salts that the magnesium and sulfate enter your body through your skin and help with lots of ailments including:

  • arthritis
  • bruises & sprains
  • fibromyalgia
  • ingrown toenails
  • insomnia
  • psoriasis
  • sore muscles from working out
  • soreness from diarrhea during chemotherapy
  • sunburn pain & redness
  • tired, swollen feet

This may be the God’s honest truth or it may be an old wives tale, I know from experience, it works! My back is no longer hurting and that’s all I care about!

There are many brands out there today that have essential oils like peppermint or lavender already added to them, which is nice! Depending on your ailment or need, you can pick and choose.

I added Helichrysum blend because it smells good and has benefits of its own. The blend I use is a substitute blend from Hopewell that contains Clary Sage, Elemi, Roman Chamomile, Idaho Tansy, Birch, and Ylang Ylang.

There claims to be an alphabet of therapeutic uses for this blend, yet caution is to be taken for folks on blood thinners, pregnant women, or those with skin sensitivities. (although it’s never bothered me)

Click on the link above to find out more about this blend or make a purchase. (I get no compensation from Hopewell-just passing on the information)

How To Use Epsom Salts For Bath Soaks

As you are running a nice, warm-not hot-bath, pour in 1-2 cups of Epsom salts so they will dissolve. (Unless otherwise given permission by the manufacturer, do not add these salts to your hot tub, whirlpool, or other jet tubs).

Soak in the tub for at least 12 minutes, relax and let the salts do their work. Then bathe as usual and carefully get out. They will soften your skin and may make the tub a little slick, so be careful.

They will also remove excess oil from your hair, so as far as I know, it’s fine to wash your hair as you normally do. (if you do it in the tub like me) There are many other personal uses for these salts as well.

You can make a skin mask or a facial cleanser, they remove blackheads and exfoliate the skin. Soaking in Epsom salts will even remove a splinter! It reduces swelling, and volumizes hair as well.

Some people swear by these salts to cure gout, I recently got my brother a bag of Epsom salts that had activated charcoal infused in them, evidently this is a gout game changer! He was better that night!!

A Brief Word on Internal Use

Epsom salts have been used for hundreds of years as a safe laxative. FOLLOW DIRECTIONS when doing so. The package says to mix 1-2 tsp. in 1 cup of warm water to detox, then drink lots of extra water.

Do NOT do this more than once a day. That is all.

Other Uses

Soak a cloth in a cold water solution of 2T of Epsom salts and 1 Cup of water to treat mosquito bites, bee stings, and poison ivy.

Treat conjunctivitis and sties with a solution of warm water and Epsom salts by rinsing your face.

Remove burnt food from pots and pans, clean bathroom tiles, regenerate a car battery, or frost your windows for Christmas.

VitaCup Vitamin Infused Coffee-My Review

My sample turned out to be a 16ct box!!

I received my sample of Genius blend from VitaCup in the mail yesterday and all I can say is Wow!! VitaCup is vitamin infused coffee that really delivers on it’s promises. Let me explain:

First of all, it has MCT infused in it, so it promises energy and focus-which it delivered! My eyes were opened instantly and my brain fog was lifted!

MCT oil is a type of fat found in various oils and dairy products like coconut oil and butter. MCT stands for medium chain triglycerides, these carbon atoms (6-12) are processed by the body differently than long chain triglycerides. They go straight from the gut to the liver where they are used as a source of energy or turned into ketones.

MCT is used by people who want to lose weight, or increase their energy and focus during a workout. Others claim it aids in thinking and may help with certain forms of dementia.

VitaCup coffee infuses this oil plus lots of vitamins like D3, B1, B5, B9, B6, and B12 for an energy boosting, metabolism supported cuppa joe to get your morning started with a kick!

Also included in the Genius blend are cinnamon and turmeric spices which are natural antioxidants that support heart health and are anti-inflammatory.

Just think, all you do is drink a cup of coffee in the morning as usual, and now your mood is lifted, you can focus on daily tasks, go workout with more energy, and the coffee tasted delicious as well!

Now, it is totally acceptable to jazz up your cup as you normally do if your thing is to add butter and sweetener (and maybe a splash of pure vanilla extract) like I do in the morning. That’s just how I roll.

Do try their coffee and tell me how you like it. Go to their website, (VitaCup) get a possible 20% discount when you sign up, log in and spin the wheel! Leave a Facebook review and earn points for future discounts. Every time you buy, you earn points once you’re registered on the site.

In addition, there are several varieties to choose from, Beauty Blend, Breakfast Blend and more! All have the vitamins you need for a fabulous start to your day already blended in a great-tasting cup of coffee.

The pods are responsibly designed to be recyclable, soy free, gluten free, BPA free, and made in the USA. What could be better than that??

PS: I got my sample on a Facebook promotion, so watch for that! It cost me $3.99 and they were nice enough to send a 16ct box! That is way more than 20% off.

(I got no financial compensation from this review)

Why It’s Good to “Eat the Rainbow”

Morning everyone, do you know why it’s important to “eat the rainbow”?

Because we cannot make our own Vitamin C, it is essential we get it from our diet. We need this important vitamin to help provide antioxidant protection, enhance wound healing, help synthesize collagen and more.

Living the Keto lifestyle means eating all types of low-carb foods, yet you could be missing your recommended amounts of Vitamin C and other nutrients.

Since fruits typically high in Vitamin C are not normally consumed on a Keto diet, it may be handy to have a list of the top ten foods that do. Vitamin C deficiency can lead to symptoms like these:

  • Dry hair
  • Slow wound healing
  • Rough, scaly skin
  • Increased bruising
  • Frequent illness or infections

So, oranges and other citrus may be out, what foods are in?

Top Ten High Vitamin C, Low-Carb Foods

  1. Bell Peppers-higher in Vitamin C than any citrus fruit
  2. Kale-also protects against 4 kinds of cancer
  3. Broccoli-provides more than 100% of your daily Vit C requirement
  4. Sugar Snap Peas-one serving exceeds recommended daily value of Vit C
  5. Brussel Sprouts-Low calorie, cruciferous veggie, helps meet daily goal
  6. Strawberries-can be consumed on keto since they contain less sugar
  7. Kohlrabi-a type of cabbage best eaten in soups or stews
  8. Cauliflower-rich in Vit C, delicious raw or cooked
  9. Red Cabbage-a veggie in the Brassica family
  10. Chicken liver-one of the only animal foods considered a good source of Vit C

Following a Keto diet doesn’t mean getting suboptimal levels of Vitamin C if you “eat the rainbow”. Try to incorporate some or all of these foods on a daily basis to maintain healthy skin, bones, and prevent certain cancers.

Why I Drink ACV Tea (Why You Should Too)

Why Drink ACV (Apple Cider Vinegar) Tea? Why use ACV in general?

Well, first off-I know for a fact that apple cider vinegar (ACV) has many benefits and uses:

  • weight loss
  • kills germs
  • home remedy for lots of ailments including arthritis, athlete’s foot, bone health, burns…the list goes on
  • pet care
  • hair care
  • cooking

The main reason however, is that I call it the mistake eraser. Yes, you read that right, I occasionally slip up and have a cheat…that’s why this blog is called Keto For Beginners. You are following me on this journey of ups and downs, hits and misses, trying things to see what works for me and what doesn’t.

If I’m being honest here, and I always try to be, I have probably not been in ketosis for a while now. I just learned that every time I cheat, I come out of ketosis, and then it takes about a week to get back in.

This is where ACV tea comes in and I’m hoping, saves my butt. Here’s why:

  • Detoxes the body
  • Slows the rise of blood sugar levels
  • Appetite suppressant
  • Reduces water retention
  • Increases metabolic rate

Much research has been done on how ACV works in the body and all of it’s many benefits, taken daily it should help at least maintain my weight if not help me lose a couple of pounds a month.

I’m no scientist, but my theory is that if I fall of the keto wagon, ACV tea will help me make up for my mistakes by speeding up my metabolism and helping me maintain a feeling of well being because I’m doing something good for my body.

Tools for making ACV Tea

How to make ACV tea:

Add this to 6-8 oz. hot water-2 TBS ACV with the “mother”

2 TBS pure lemon juice (Not the kind from concentrate)

Stevia to taste or raw honey 1-2 TBS (if not on keto)

Healthy shake of Ceylon cinnamon (click link to purchase)

Stir and drink this “tea” once a day or more. Some say before meals, I just drink it in the morning before my coffee, or in the evening after my dinner, one of the two.

Now, am I saying it’s ok to cheat? Absolutely not, I’m admitting I’m human, and I make mistakes. I go out to eat with my husband and sometimes I don’t have the willpower to say no to the chips and salsa.

I went with my mother-in-law to eat after her CT yesterday and we both sat down to a steaming bowl of grits. I knew it was wrong, but I wanted it anyway. 🙂

Now, I get to start all over getting back into ketosis. According to the experts, that takes time, depending on how much you restrict your carbs and other factors. Dinking ACV tea can help.

Where to purchase ACV

Amazon, through my links here on the blog (which helps me out if I make a few cents) or in your grocery store or health/whole foods store. Just make sure you get the kind with the “mother” as that is the most beneficial type of ACV.

Bragg is one brand and Whitehouse is another that I use sometimes. Never drink ACV undiluted, it is bad for your teeth and esophagus. That’s why you should drink it in a pleasant tasting tea.

Has anyone reading this taken ACV for a spin? Did you like it? Tell me about it in the comments or ask me any questions you have regarding this natural cure-all.
