Many Happy Desserts

Sometimes, even people following the Paleo lifestyle like a sweet treat. Which is why I consulted my Pinterest board for some tasty ideas for ice cream-Paleofied of course! On my Everything Paleo board, I found a tempting looking ice cream called Caramel Almond Crunch from Well, to make a long story short, I had no dates. Dates, evidently make the best caramel…not raisins. Which I subbed. Not horrible and with a few tweaks, I believe I can improve the flavor. Butter makes everything better right? My favorite (and only) butter is brand because it is grass-fed and simply delicious. I think if I heat the “mistake” up in a saucepan and add some butter, I’ll save this mess of a dessert I made. Now, the ice cream itself was frozen bananas, blended to a creamy texture. Then came the caramel and on top, my favorite homemade trail mix, Maple Nut Trail Mix from


Like I said, pretty good but could have been better. When in the kitchen, mistakes are how you learn, become inventive, and sometimes even create a new masterpiece. What are your food fails? Pokemon Go?

Ok, I must be the only clueless person left in America about this craze that has hit like a hurricane in our neck of the woods. At least I am according to my son, who is staying the weekend with us. He was extremely surprised at this fact, and enjoyed the chance to explain all the nuances of the game to his mother, someone who is usually up on this type of thing. Not the game aspect of things, just like, the latest thing everyone is talking about.  While I get the gist of the game, the lengths people are going to while playing…not so much. Here’s a game where you’re doing something good for your body by getting up, out, and off the couch, walking miles to catch this funny little cartoon character, yet people are walking in front of cars, running into one another, getting robbed and all sorts of craziness, in the quest for the elusive Pokemon.

The first pic shows the warning, clearly stating at the beginning of the game, to be alert and aware of your surroundings. Hello?! And what about the fact that the game is meant to bring like minded folks together, yet everyone is walking around in a huge group, looking like zombies all over the world.

The second pic is just part of my son’s personal collection thus far. This is a guy who has been not only active in sports most of his life, but played Pokemon games as a child, so, for him and others like him, they’ve turned their childhood dream into reality. He has always been that kid who picked up any sport and played his heart out at it. So, it’s no surprise to me, his unbridled enthusiasm knows no bounds at the moment. Since he is in decent shape, my hope is that what he gains from the game is a new level of social interaction or a unique way to earn some pocket change. The ways you can profit by this game are limited only by your imagination.  It sounds like a truly evolutionary idea in gaming, however, even he sees how it’s become the perfect example of a society who knows no moderation.

My take on the whole thing is, get on out there and go Pokemon Go, but for goodness sakes, BE CAREFUL!! I’ll stick to exercising in the pool for now thanks, and I’ll be watching all the shenanigans from my vantage point, here on the patio! 😉

It’s an uncommon occurrence for rain to be falling in Texas in July, but that is what happened this morning! We’ll take it! The more it rains, the less we have to water, and the water bill is less. Any time you’re saving money is a good time. My only wish is that we could simply have rain without hail, or 60mph wind gusts, which luckily did not happen at my house, other towns near me got that though. The pic above was from a friend headed into Ft Worth this morning.  I didn’t have that cool a view, just experienced some wind and light rain.  Anyhow, the plants and flowers love it, and my husband has plenty of grass to mow, sometimes I think that’s his therapy. They are calling for more tonight which is fine with me, soon it will stop until October I’m sure! On top of that, the temp is a warm but tolerable 93 degrees and usually we are in the triple digits by now.  As long as I get my pool time, I’m a happy camper- unlike our experience last weekend, when we had plans with friends and got rained out! All, in all, it’s been a bizarre month for weather around here, but hey, it could be worse…could be snowing!

Singing Praises

Good morning everyone! How are you all doing on this beautiful, albeit, hot morning? My first venture outside proved to be warm and muggy already at 7am! Anyway, it’s gonna be a great day and I just wanted to share my joy with you-it’s about a new product I’ve been eating and it is nutritious and delicious! This is a cereal, something I don’t eat much of, since I follow the Paleo lifestyle. It’s by Van’s brand and it’s called Blissfully Berry. All of their cereals are made from whole grains including gluten free oats, brown rice, millet, quinoa and amaranth. No wheat! As far as I’m concerned, that is safe for those like me that eat a whole food diet. The company is very concerned about clean eating and most, if not all of their products are non-GMO and certified gluten free.


As you can see, I enjoy them with So Delicious cashew milk, and of course, my bulletproof coffee. Just in case the Paleo police come after me, I’ve reached out to the company to assure me that their products are safe for those on diets like mine, regardless, I will continue to enjoy them, since I follow the 80% rule most of the time. That is, I eat Paleo 80% of the time. I’m healthy and still at my target weight, so I’m not that concerned.

Summer Is Tea Time

Man, I love tea! I guess you could say, especially in the summer, I have an addiction. Ice tea. I drink it by the gallon, in addition to water, but tea hits the proverbial spot! Here is a pic of me preparing another pot.


Lately, I have taken to adding one bag of a specialty or flavored tea to 2 bags of regular tea. Today’s choice is black chai. I love the spicy flavor, not to mention the aroma fills the kitchen as I’m making it. Sometimes, it’s raspberry zinger, other times, simply cinnamon.
