Finally, A Porridge I Can Love!

Baby, it’s cold outside and that calls for a nice, hot bowl of tasty, low-carb porridge to warm you from the inside out! Finally, I have stumbled on one that I can love, made from almond flour, flax, egg, butter, and cream, with the texture I’ve been missing from cream of wheat.

I was searching through my Pinterest board, looking for a warm bowl of something tasty to make for breakfast, since it’s 29 degrees here in Texas this morning, when I saw it. A post from The Low Carb Maven about a porridge that’s simple, quick, and tastes just like the cream of wheat I used to eat back in the pre-Paleo, pre-Keto days.

She calls it just what it is, Almond Flour Porridge Breakfast Cereal (Low Carb, Keto, Paleo) and I was in such a rush to eat it, I totally forgot to take a picture of it! I’m a terrible blogger! (Just click the link for a photo.)

Since I can no longer eat oatmeal (and never was a fan anyway), I love the thought of a warm, buttery bowl of goodness like this here porridge provides. It is also important that it has the same mouth feel as cream of wheat, or malt-o-meal like I used to eat as a kid.

The recipe comes together quick, I opted for a mix it-microwave it til it’s ready version, but you can make it on the stove as well. I was in a rush. It still turned out perfect! It looked a little different in the bowl, yet tasted perfectly fine on my tongue.

My sweeteners were the only change to her recipe, as I don’t have any of the kind she mentioned. I always use Pyure brand Stevia and/or coconut sugar, in this case I used a little of both. She didn’t say, but I use Kerrygold grass-fed butter also. (Always!)

Almond Flour Porridge

Ingredients:

3 T Sukrin Defatted Almond Flour

1T ground golden flax

pinch salt

3/4 C water

1 lg beaten egg

1T Sukrin Gold (or your favorite sweetener to taste)

1T heavy cream

(She added berries but I did not, totally up to you, just figure in the added carbs)

She also gives on the stove instructions, but I mixed everything into the beaten egg except the cream which I added later as the cereal started to thicken in the microwave. I cooked it in 45 second bursts until it was thick and hot.

Let me know your thoughts if you try it, oh, and one more thing of note; I used the almond flour I had on hand, and the flax too, which was brown…it turned out just as good. 😉

Take It Easy Monday Featuring Low Carb Blueberry Muffins

So most of you know I received my stem cell injection in my knee last Wednesday, I have been instructed to “take it easy” for the next couple of weeks.

If you know me well, you know I don’t do sitting around very well. That being said, I want this to work, so I have been trying to rest more than usual.

Well, this morning, I just did my normal routine, deciding to pop those quick Low Carb Blueberry Muffins in the oven before my shower, and when I got out and went to check on them, my knee was already swollen!!

So I sat with some ice on my knee while I consumed that muffin as part of my breakfast. I have to give Lillie over at Listotic for the recipe! These came out moist and with a lovely texture, not very sweet, might should have left them to brown a little longer.

I may have to tweak the recipe a bit to add more flavor, they were alright with my last couple of sips of bulletproof coffee. Just being honest here.

I need to get back on track, the hubby has been off for a week or so and I have been cheating a little bit too much. 😉

These muffins fit the bill when you are tired of eggs with 7 g of protein and 8g of carbs. Combined with a cheese stick and 4 pieces of hard salami (0 carbs total) that is a pretty low carb breakfast choice.

So you might ask what all did I do to get my knee so swollen…not much! Fed the animals, watered the plants, threw in a load of laundry, checked my emails, emptied the cat’s litter box, and made the muffins.

Wait, I also made my ACV tea, then my coffee, and ran out to put a garbage can to the curb. Later, I had to take another small bag out there. That’s all!

Of course, I cleaned the sink a couple of times too, took my shower and then sat back down to eat and ice and write this post. Once that’s done I have a couple of errands to run, but I will wear my brace for that, then come home and write some more.

That IS an easy Monday for me, honestly. I also aim to get in the pool and exercise my legs in a nice, no impact kind of way. Surely the dr would approve of that!

What’s For Breakfast?

Good morning everyone and how are we doing today? Many folks new to Paleo/Keto lifestyles have a difficult time figuring out what to eat for breakfast. What can you eat, they ask.

As it turns out, you can have most anything you’re used to, you just have to modify, and for me, simplify things a bit. Take my breakfast this morning. Easy peasy omelet “muffins” I prepared Sunday afternoon. To that I added a handful of blackberries, since berries are low carb and low sugar, and a mini-baby bel.

Yesterday the meal was the same except I had 1/4 avocado in the place of the cheese. Besides my bulletproof coffee in the am, I need another source of good fats, and avocado provides that.

You all remember what goes in my bulletproof coffee right? Hot cuppa jo, 1tbsp of Kerrygold butter, 1tbsp unrefined coconut oil, Pyure Stevia sweetener,  a few drops of vanilla extract, and a healthy shake of Ceylon cinnamon. Yum! Swirl all that up in a blender cup, bullet, Ninja or whatever your favorite blender is and sit back and enjoy the bliss!

Other days, especially if I’m in a hurry, I’ll whip up a delicious smoothie in my Ninja blender cup.

If you have more time, you could fry up an egg in some butter (grass-fed of course) and add a piece of bacon or two, or any type of baked good using almond or coconut flours. There are Keto recipes everywhere on how to make pancakes, waffles, or muffins. Pinterest is literally full of them!

Instead of making y’all hunt for them though, I’m going to add some handy links so you have the recipes at your fingertips! I make my omelet muffins a bit different, just adjust the recipe to your tastes.
