So…the Crackers

This is my breakfast from today. This is how I normally eat, homemade, whole foods for the most part. Lately however, maybe because I feel good and I’m at a healthy weight I think it’s ok, maybe because I’m giving in to some cravings, I don’t know, but I’ve been enjoying some snacks from Van’s brand foods. I know, here come the Paleo police, but, hang on! In moderation, I don’t see the harm.

My favorite of these delicious treats are the crackers they call The Perfect 10. Normally gluten free snacks taste like unsalted cardboard to me but not these, in fact, everything I’ve tasted from this company tastes awesome! I’ve tried about 3 different flavors of cereal and a couple of cracker flavors. These Perfect 10 crackers though, these are the bomb!! Hey, at least I eat them with guacamole, a healthy dip, or hummus, another healthy dip! Thing of it is though, they are fantabulous all by themselves!!

I actually wrote an entire article about them today-when it’s published I’ll send you the link, but the short of it is, they are made from grains and seeds and they are gluten free, non-GMO, they provide fiber, vitamins and nutrients so….they aren’t the most evil snack, just enjoy them in moderation! Now, when I was more of a Paleo purist, I wouldn’t touch them with a 10 ft pole. Only because I was taught you don’t eat anything from a box or a bag. Which is true, if you want to lose weight (which I don’t anymore) or if you have celiac or gluten issues (but these are ok for those people too!)

So, the “skinny” is, these crackers get my vote for a once in a while treat!

Many Happy Desserts

Sometimes, even people following the Paleo lifestyle like a sweet treat. Which is why I consulted my Pinterest board for some tasty ideas for ice cream-Paleofied of course! On my Everything Paleo board, I found a tempting looking ice cream called Caramel Almond Crunch from http://Flavourandsavour.com. Well, to make a long story short, I had no dates. Dates, evidently make the best caramel…not raisins. Which I subbed. Not horrible and with a few tweaks, I believe I can improve the flavor. Butter makes everything better right? My favorite (and only) butter is http://Kerrygold.com brand because it is grass-fed and simply delicious. I think if I heat the “mistake” up in a saucepan and add some butter, I’ll save this mess of a dessert I made. Now, the ice cream itself was frozen bananas, blended to a creamy texture. Then came the caramel and on top, my favorite homemade trail mix, Maple Nut Trail Mix from http://Dontmesswithmama.com.

Like I said, pretty good but could have been better. When in the kitchen, mistakes are how you learn, become inventive, and sometimes even create a new masterpiece. What are your food fails? Singing Praises

Good morning everyone! How are you all doing on this beautiful, albeit, hot morning? My first venture outside proved to be warm and muggy already at 7am! Anyway, it’s gonna be a great day and I just wanted to share my joy with you-it’s about a new product I’ve been eating and it is nutritious and delicious! This is a cereal, something I don’t eat much of, since I follow the Paleo lifestyle. It’s by Van’s brand and it’s called Blissfully Berry. All of their cereals are made from whole grains including gluten free oats, brown rice, millet, quinoa and amaranth. No wheat! As far as I’m concerned, that is safe for those like me that eat a whole food diet. The company is very concerned about clean eating and most, if not all of their products are non-GMO and certified gluten free.

As you can see, I enjoy them with So Delicious cashew milk, and of course, my bulletproof coffee. Just in case the Paleo police come after me, I’ve reached out to the company to assure me that their products are safe for those on diets like mine, regardless, I will continue to enjoy them, since I follow the 80% rule most of the time. That is, I eat Paleo 80% of the time. I’m healthy and still at my target weight, so I’m not that concerned.

Ok, for all the Paleo purists out there, bring it, I’m ready-I’ll talk to ya, send me a comment and I’ll be seeing everyone later-on the patio!

Wednesdays Are For Dad

img_3237 A few weeks after starting my part time job, I started visiting my dad on Wednesdays and we sort of developed a routine. I go over around lunch, we eat, either at his house or out somewhere, we go back and play a few games of pool (more like 10!) and then somewhere in there, I help him fold his laundry. Just a few hours, but they have become important for both of us. Now that my mom is gone, we need each other more than ever and, besides Sunday dinner, this is a block of time reserved for each other. We have become quite comfy with this routine and the hardest part of it is trying to decide where to go for lunch! Today was to a local Chinese restaurant that we have both grown fond of. We end up getting three meals out of it because, with my eating a mostly Paleo diet, he always gets my egg roll, rice, and whatever of his entree he doesn’t finish, not bad for around $11.

Sure, I do other things on Wednesday as well, but I look forward to our afternoons together and I’m sure it’s a break for him as well from the monotony of another day spent mostly alone, save his old chocolate lab named Sophie. Technically, she was my mom’s, but he loves her just as much. My oldest son lives with him as well, however, he works all day during the week and doesn’t see him much. Some weeks I see him more, some less, but now, we always have our Wednedsays. Oh, and as for that fortune I got today, I ain’t buyin it…unless the numbers on the back are the same ones I got on my lottery ticket, and it wins. Fat luck!!

Welcome!

imageWelcome to my patio, a place where we can relax, be ourselves, and talk about whatever we want. I’m sitting here on my brand new furniture, enjoying the morning with a hot cup of “bulletproof” coffee and thinking about what to transplant next. My sister-in-law gave me some new pots, and I’m just dying to fill them. I want to stick to a more tropical look, a feat since I live in north central Texas, where the heat and humidity are completely different than when we lived close to the coast in Groves.

Anyway, I want to invite all my former readers to stay with me here, and if you want to follow the old site, Essentially Paleo Life, it will find a new home at www.kimsmyth.org. There, I will continue my Paleo journey, as soon as I get the site designed and ready to go live, or I may change my mind and start something new. Here, I’m established already and I do hope to keep you engaged with new, fresh stories and posts. Let’s have some fun, dish about plants and anything else that crosses our minds, and let me know what your interests are. What do you want to know more about? What kind of plants do you like? How do you want your yard and/or patio to look.
